With less cocoa butter than the iconic Callebaut 811 counterpart (around 12% less), L811 offers a very low fluidity, meaning you'll get a thicker set chocolate. Perfect for larger moulds that may otherwise be prone to snapping easily with standard fluidity chocolate.

The classic Callebaut 811 flavour profile — intense cocoa, smooth vanilla, and a touch of sweetness — ensures L811 is a reliable multi-application chocolate for those times when a more fluid chocolate just won't do.
