For the Pastry (Pâte Sucrée)

  • 200g plain flour
  • 80g icing sugar
  • 25g ground almonds
  • Pinch of fine sea salt
  • 120g unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tbsp cold water

For the Mango Layer

  • 200ml mango pureé (fresh or good quality store-bought)
  • 20g caster sugar
  • 2 gelatine leaves, soaked in cold water
  • Juice of ½ lime

For the Tanariva Ganache

To Finish

  • Fresh mango, thinly sliced or diced
  • Lime zest
  • A pinch of fleur de sel

Method

1. Make the pastry

  1. Blitz flour, icing sugar, ground almonds, salt, and butter until it resembles fine breadcrumbs.
  2. Add egg yolk and cold water, pulse until the dough just comes together.
  3. Chill for 1 hour, roll to 3mm, line a 23cm tart tin, chill 30 minutes.
  4. Blind bake at 170°C fan for 15 minutes, remove beans, bake 8–10 minutes until golden. Cool completely.

2. Make the mango layer

  1. Warm mango pureé, sugar, and lime juice in a small saucepan until the sugar dissolves.
  2. Squeeze excess water from the soaked gelatine and stir into the warm mango until dissolved.
  3. Cool to room temperature, then pour into the cooled tart shell. Refrigerate for 45 minutes until set.

3. Make the Tanariva ganache

  1. Place Tanariva fèves in a heatproof bowl.
  2. Heat cream and vanilla paste until just below boiling. Pour over the fèves in three additions, stirring from the centre until smooth and glossy.
  3. Add butter and stir until fully emulsified.
  4. Cool to around 35°C, then pour gently over the set mango layer.
  5. Refrigerate for at least 2 hours until set.

4. Serve

Remove from the fridge 20 minutes before serving. Top with fresh mango, a grating of lime zest, and a pinch of fleur de sel. Serve in thin slices — the combination of tangy milk chocolate and tropical mango is extraordinary.

Tips for the Best Result

  • Cool the ganache before pouring — if it’s too warm, it will melt the mango layer. Aim for around 35°C.
  • Use ripe, sweet mango — the sweetness of the mango balances Tanariva’s natural acidity perfectly. Alphonso mango pureé is exceptional here.
