For the Pastry (Pâte Sucrée)

  • 200g plain flour
  • 80g icing sugar
  • 25g ground almonds
  • Pinch of fine sea salt
  • 120g unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tbsp cold water

For the Caramel Crispy Crunch Layer

  • 80g Sosa Caramel Crispy
  • 60g Valrhona Caraïbe 66% fèves, melted
  • 40g hazelnut praliné paste
  • Pinch of fleur de sel

For the Valrhona Ganache

  • 280g Valrhona Caraïbe 66% fèves
  • 230ml double cream
  • 25g unsalted butter, room temperature
  • 1 tsp vanilla paste

Method

1. Make the pastry

  1. Blitz flour, icing sugar, ground almonds, salt, and butter until it resembles fine breadcrumbs.
  2. Add egg yolk and cold water, pulse until the dough just comes together.
  3. Chill for 1 hour, roll to 3mm, line a 23cm tart tin, chill 30 minutes.
  4. Blind bake at 170°C fan for 15 minutes, remove beans, bake 8–10 minutes until golden. Cool completely.

2. Make the crunch layer

  1. Mix melted Caraïbe with praliné paste and fleur de sel until smooth.
  2. Fold in the Caramel Crispy gently — don’t crush the pieces.
  3. Spread evenly over the cooled tart base in a thin, even layer.
  4. Refrigerate for 20 minutes to set.

3. Make the ganache

  1. Place Caraïbe fèves in a heatproof bowl.
  2. Heat cream and vanilla paste until just below boiling. Pour over the fèves in three additions, stirring from the centre until smooth and glossy.
  3. Add butter and stir until fully emulsified.
  4. Cool to around 35°C, then pour gently over the set crunch layer.
  5. Refrigerate for at least 2 hours until set.

4. Serve

Remove from the fridge 20 minutes before serving. Finish with a few pieces of Caramel Crispy on top and a pinch of fleur de sel. Slice with a warm, clean knife — you’ll hear the crunch layer as you cut through.

Tips for the Best Result

  • Don’t crush the Caramel Crispy — fold gently to keep the pieces intact and maximise the textural contrast.
  • Keep the crunch layer thin — 3–4mm is ideal. Too thick and it becomes difficult to slice cleanly.
  • Cool the ganache before pouring — if it’s too warm, it will melt the crunch layer beneath. Aim for around 35°C.
  • Add Caramel Crispy garnish just before serving — pieces on top of the ganache will eventually absorb moisture from the air. Add them at the last moment for maximum crunch.
