It depends on the application. For decoration, raw kernels preserve their vivid green colour best. For baking into cookies, cakes, or brownies, light roasting at 150°C for 8–10 minutes deepens their flavour significantly. For pistachio paste or praline, roasting first gives a richer, more complex result.
Lightly roast the kernels, allow to cool, then blend in a food processor until a smooth paste forms. This can take 5–10 minutes — scrape down the sides regularly. For a sweeter paste (as used in patisserie), add a small amount of icing sugar and a neutral oil to achieve the desired consistency. Pistachio paste can be used in macarons, tarts, ice cream, and ganaches.
To preserve the green colour in baked goods, avoid over-roasting and add them towards the end of baking where possible. For decorative use on top of cakes or tarts, add after baking. Blanching raw kernels briefly in boiling water and then rubbing off the skins can also intensify the green colour.
As a guide, 200g of pistachio kernels will yield approximately 150–180g of pistachio paste, depending on how much oil and sugar you add. For a standard macaron batch (around 30 shells), you'll typically need 50–80g of paste.
Store in an airtight container in a cool, dark place. Due to their high fat content, pistachios can go rancid if exposed to heat or light. For longer storage (up to 12 months), keep in the freezer in a sealed bag. Bring to room temperature before use.
