Louis François Pectine 325 NH95 is a premium professional-grade pectin widely used in patisserie, confectionery, and fruit preparation. NH95 pectin is a thermoreversible pectin — meaning it can be remelted and reset multiple times without losing its gelling properties — making it the preferred choice for mirror glazes, fruit glazes, and nappage applications where a glossy, flexible, and stable gel is essential.
Derived from fruit, NH95 pectin produces a smooth, clear gel with excellent shine and a clean, neutral flavour that allows the natural taste of your fruit preparations to come through. It sets at a relatively low pectin concentration, making it highly efficient and cost-effective in professional production.
