Louis François Liquid Glucose DE60 is a professional-grade glucose syrup with a higher dextrose equivalent of 60, offering greater sweetness and lower viscosity than DE40. This makes it particularly well-suited to applications where a more fluid consistency is required, such as soft caramels, nougats, marshmallows, and certain ice cream and sorbet bases where a lower freezing point is desired.
With its higher reducing sugar content, DE60 glucose is highly effective at controlling crystallisation, improving moisture retention, and extending the shelf life of confectionery and baked goods.
