For the Pastry (Pâte Sucrée)
- 200g plain flour
- 80g icing sugar
- 25g ground almonds
- Pinch of fine sea salt
- 120g unsalted butter, cold and cubed
- 1 egg yolk
- 2 tbsp cold water
For the Caraïbe Ganache Filling
- 300g Valrhona Caraïbe 66% fèves
- 250ml double cream
- 30g unsalted butter, room temperature, cubed
- 1 tsp vanilla paste
- Pinch of fleur de sel
Method
1. Make the pastry
- Blitz flour, icing sugar, ground almonds, salt, and butter in a food processor until the mixture resembles fine breadcrumbs.
- Add the egg yolk and cold water. Pulse until the dough just comes together — do not overwork.
- Flatten into a disc, wrap, and chill for at least 1 hour.
- Roll out to 3mm thickness and line a 23cm loose-bottomed tart tin. Chill for 30 minutes.
- Blind bake at 170°C fan for 15 minutes with baking beans, then remove beans and bake for a further 8–10 minutes until golden and dry. Cool completely.
2. Make the ganache
- Place the Caraïbe fèves in a heatproof bowl.
- Heat the double cream and vanilla paste in a saucepan until just below boiling. Pour over the chocolate in three additions, stirring from the centre outwards each time until smooth and glossy.
- Add the butter piece by piece, stirring until fully emulsified.
- Pour into the cooled tart shell. Tap gently to level.
- Sprinkle with a pinch of fleur de sel.
- Refrigerate for at least 2 hours until set.
3. Serve
