For the Biscuit Base

  • 250g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • Pinch of fine sea salt

For the W2 White Chocolate Mousse

  • 350g Callebaut W2 White Chocolate callets
  • 100ml double cream (for melting)
  • 4 gelatine leaves, soaked in cold water
  • 400ml double cream, lightly whipped to soft peaks
  • 1 tsp vanilla paste

For the Raspberry Layer

  • 300g fresh or frozen raspberries
  • 50g caster sugar
  • 2 gelatine leaves, soaked in cold water
  • Juice of ½ lemon

Method

1. Make the base

  1. Mix crushed biscuits with melted butter and salt until combined.
  2. Press firmly into the base of a lined 23cm springform tin.
  3. Refrigerate for 30 minutes to set.

2. Make the mousse

  1. Melt W2 callets with 100ml cream over a bain-marie until smooth. Remove from heat.
  2. Squeeze excess water from the soaked gelatine leaves and stir into the warm chocolate mixture until dissolved.
  3. Add vanilla paste and stir to combine. Cool to around 35°C.
  4. Fold the lightly whipped cream into the chocolate mixture in two additions — gently, to keep the mousse airy.
  5. Pour over the biscuit base and smooth the top. Refrigerate for 2 hours until set.

3. Make the raspberry layer

  1. Heat raspberries, sugar, and lemon juice in a saucepan until the raspberries break down. Strain through a fine sieve to remove seeds.
  2. Squeeze excess water from the soaked gelatine and stir into the warm raspberry coulis until dissolved.
  3. Cool to room temperature, then pour over the set mousse layer.
  4. Refrigerate for at least 2 hours, or overnight.

4. Serve

Run a warm knife around the edge of the tin before releasing the springform. Decorate with fresh raspberries, a dusting of freeze-dried raspberry powder, and a few white chocolate curls. Slice with a warm, clean knife.

  • Don’t overheat W2 — white chocolate scorches easily. Keep the bain-marie at a gentle simmer and stir frequently.
